For those following special diets, or if food allergies and intolerances are a concern, learning to prepare safe and healthy foods is essential. Cooking to Heal provides recipes and instruction to help you plan and create healing meals for yourself and family.

This class incorporates elements of many diets commonly applied and found effective with these neurological and inflammatory conditions including:

           GFCF • SCD • GAPS • Low Oxalate • Body Ecology • Feingold

We will discuss natural and artificial food chemicals that can be problematic for individuals such as:

salicylates/phenols • amines • glutamates • artificial ingredients

100% of the recipes in the class will be gluten-free.

We will discuss how to adapt food choices to fit within dietary requirements, and more!

This class supports individuals and parents' cooking to heal, and use of diet to heal by:

  • Removing inflammatory and problematic foods
  • Adding easy to digest, nutrient dense foods

We will focus on dietary principles that help restore balance to these body systems—common underlying causes to many neurological and inflammatory conditions:

  • Immune function
  • Inflammation/pain
  • Digestion
  • Detoxification

You will learn the benefits of, and how to prepare:

  • Fermented foods: raw sauerkraut, nut milk yogurt, and non-dairy kefir (excellent for digestion, reducing yeast overgrowth, immune function, reducing inflammation), and lacto-fermented fruits, kombucha, and kefir sodas (favorite children’s fermented foods),
  • Broths and soups: Vegetable and mineral broths, chicken and beef stocks, and soups (boost and “sneak in” nutrition with nutrient dense broths)
  • Raw dairy & fermented dairy products including butter, yogurt, kefir, and whey (When tolerated, raw dairy has many nutritional benefits, including calcium absorption, immune support, and digestive support. As the gut heals, raw dairy is often tolerated when regular dairy is a problem - excellent for those on SCD)
  • Soaking and fermenting grains, nuts, and beans including how to make nut milk and nut butter (essential preparation for proper digestion and nutrient absorption of all “seeds”)
  • Foods from pasture-raised animals (nourishing to the brain and the nerves)
  • Grain-free & Gluten-free breads and snacks

For those starting out: you'll learn essential basics of healthy cooking to heal.
For those who have been working with diet for a while: you'll learn to optimize nutrition and further refiine food and cooking choices.

Family and kid-friendly recipes

Kid-friendly and family-friendly recipes and ideas will be provided, maximizing your time in the kitchen and increasing your success in getting everyone to eat.  Picky eaters will benefit greatly as the class presents modified options just for them.
